Instead of setting up his stall in a hotel or mall, the UK-born chef has launched his latest restaurant in two adjoined shophouses in the River Valley conservation area. You’re greeted at the door by one of the ex-Raffles doormen, then you’re invited to navigate a leafy pathway to the restaurant. The dim lighting within the shophouse seems to conjure up the appeal of a cosy English pub in winter (albeit a slightly glamorous one) and the welcome by the front of house and waiting staff is just as warm. Dishes include potted duck for starters and a rack of lamb cutlets as an entree. Prices are on the high side, but it’s worth it. Think British comfort food with a Michelin-starred touch. Open now.

It’s quite clear that when Raffles Hotel relaunches after its multi-million dollar renovations, it’s coming back with a bang. For the three-Michelin star chef will be opening her latest restaurant in the hotel’s main dining room. She said recently that she always looks for “aromatic complexity and powerful taste”.
